So here is the promised recipe! I love love love lasagna, I swear I could be Garfield haha. When Tad made lasagna for me a few years ago I was like- yep he is a keeper! I actually learned how to make it by myself as well- it is really easy! Just takes somewhat long! So here is the recipe- based on Gordon Ramsay's recipe! I don't have exact measurements for things, I usually just season and stuff while I go. All of it also depends on how much meat you have!
Ingredients -Carrots-5 medium - Onions- 3 big - Garlic-5 cloves - Butter- 50g for cooking - Salt, Pepper, Oregano, Basil, Thyme, Rosemary+ fresh basil and pasley - Beef 1kg and Pork 0,5kg minced meat - Tomato pyre- 1 small can - Canned Tomatoes- 3 cans - Red Wine, Milk For Béchamel: - Butter 200g - Milk 1l - Flour- depends on need - Salt, pepper, nutmeg - parmesan cheese
Step 1: Chop up the carrots, onion and garlic. Then heat up the pot and put a bit of butter and oil in it. When it is really hot put the chopped up vegetables in. Make sure the pot is really heated up, otherwise the vegetables would get soggy from sucking up the oil! Sear this mix and add some pepper, salt and oregano.
Step 2: Add meat to the vegetable mix. Make sure to properly split the meat in small pieces in the pot so that there aren't big chunks of it in the lasagna! once again season the mix with some salt, pepper and oregano.
Step 3: Add tomato pyre to the meat. Make a little hole in the middle of the pot where you put the pyre and then slowly mix it in with the meat. After that add the canned tomatoes. and let everything boil. Add some more salt, pepper, oregano and also dried basil, thyme and a little bit of rosemary.
Step4: Add half a bottle of wine and let it boil for about an hour or and hour and a half. Then you can taste it and see what seasoning you need to add. At this point you can add fresh basil and parsley. Then you also add the milk- about 0,15l of it. and let it cool off.
Step 5: Make the béchamel cheese sauce. First you warm up a pan and put approx 200g of butter in the pan. Wait until it warms up and then add flour by bits and keep on mixing it together until the texture is really thick. Warm up some milk- you will need approx. 1l of it. Mix the milk in until the texture is nearly liquid. Add salt, pepper and nutmeg. It is hard to explain how it is exactly supposed to be, but you need to keep in mind that you will be spreading it in layers so it can't be too thick.
Step 6: Layering. First put béchamel in the lasagna tray. Then pasta, bolognese, béchamel and over and over again. I usually get six layers of pasta. The last layer is only pasta with béchamel over it and topped with parmesan cheese- when you do this the last layer is nice and crispy! Bake for approx and hour at 180 degrees celsius. The top layer should be a nice and golden!
